Junior Chef Academy (11-15) – Bronze
In the Junior Chef Academy at Bronze Level, you will learn to develop knife skills, clean as you go and working safety. You will also learn a range of cooking methods, including boiling, steaming, frying and baking.
The course gives you the opportunity to work in a professional kitchen to a high standard of health and safety under head chef instruction. You will develop your skillset of multi-tasking as dishes are prepared.
This course will build your confidence and control of food process at one time and introduce you to Cultural Capital cuisine from all around the world, such as Mexico, Greece, Italy.
The first week. the Junior Chefs, will be measured for chef uniform, and the uniform ordered from Russum’s our uniform supplier. The fee of £80.00, has bee waivered for this course, the college will pay for chef white jacket and apron, and all food cooked on the course. You will need to bring in an appropriate plastic sealed container each week to take home for your evening tea!
The class will be start at 16:30 and end at 18:45, and on the final week, an awards ceremony will be held in Horizons, where you will prepare and deliver a two course evening meal, to family, friends and guests and receive completion certificates and appropriate badges. This will have a charge of £10 per person, the student graduation will be free.
Completion of the bronze course will allow you to progress onto the Silver course, planned for after May half term in 2025 (TBC).
This course is planned to run on a Tuesday each week during 2025, but this is subject to change.

I have been really happy with the Level 4 Learning and Skills Mentor apprenticeship. The monthly lessons, led by Leigh, are well thought out and engaging. We receive excellent resources and have ample opportunities to practice our techniques during the lessons. Allowing for group collaboration and sharing of experiences.
