Senior Production Chef Apprenticeship Level 3
As a senior production chef apprentice you will supervise a production chef team in a variety of kitchen environments, such schools, hospitals, high street casual dining, pubs or restaurants. You will be accountable for day-to-day running of the kitchen service, producing monitoring and maintaining consistent food standards.
You wil learn the legislative requirements and quality required across all areas incuding during all stages of production and supply. You will have rsponsibility for all HASSP and COSHH requirements, including SFBB and health and safety.
You will report to the head chef or appropriate line manager. A senior production chef will lead a brigade team or support a head chef in a catering establishment.
- You must have completed an appropriate vocational qualification at Level 2
- Or currently employed as a supervisor in working kitchen environment
Supervise and contribute to developing recipes and menus
Support cost reduction, improve performance, revenue, profit margins and customer experience.
Supervise the production of dishes to meet specific dietary requirements
Complete, monitor and maintain food safety management systems
Identify training needs and assist in recruitment of kitchen personnel
Lead team briefing and meeting with key member of staff
The employer should be aware that this apprenticeship standard is for a senior production chef apprenticeship role aimed at those employees who work well under pressure and are able to support a team that are producing high volumes of food. This requires good time management and supervisory skills, including good communication and leadership qualities, that support the business. Progression could lead to a Level 4 Hospitality Management apprenticeship.
