Professional Patisserie and Confectionary Certificate Level 2
This course will run over four days and will be delivered in on of our unique professional training kitchens at South Devon College. The focus will be on the professional production and presentation of several types of desserts using freshly made sauces syrups and garnishing techniques.
You will develop your skills to establish your own style of finishing and you will develop your awareness, accuracy and attention to detail.
The unit will analyse the differences between basic dough, enriched dough, and laminated dough. Professional standards will be managed with emphasis on presentation of produce and marketing of the produce.
Course Details
- Ideally, the applicant should have completed a professional general cooking course prior to enrolment. A genuine interest in patisserie and confectionery, with a desire to possibly enter the industry to take up this profession
This unit will include the production of items such as crème brulés, chocolate mousses, cheesecakes, rice dishes, and fruit-based desserts and meringues, sticky toffee puddings
The unit of paste products will focus on diverse types of pastry- ranging from puff pastry, choux pastry, sweet pastry, and short crust pastry
Produce such delights as biscuits and cakes, using their skills to finish the products to a high standard
Produce freshly baked products, such as fresh bread, bread rolls, brioche, croissants, pain au chocolat, doughnuts
Explore chocolate and production of chocolate products including the tempering of product
