Patisserie Masterclass Level 2
In this one-day masterclass, you’ll get an introduction to Pastry and Confectionery and learn the fundamental techniques of pastry, including dough, creams, and fillings necessary to achieve successful creations.
You’ll learn relevant skills and techniques such as: knife skills, variety of desserts using shortcrust, puff and filo pastries.
You should bring in your own chef uniform or suitable protective clothing for a kitchen environment, including safety shoes.
- You should have a keen interest in developing patisserie skills, be employed or recently employed in the catering industry, and it may be helpful if you've completed a Level 2 catering qualification
Using the stencil technique with Jaconde sponge, lining entremets and delice
Preparing gels and glazes, fruit mousses, Italian cream, and flavoured chocolate ganache
Understanding basic tempering for chocolate and making dessert decorations
An easy way to compliment the dessert -Sweet treats – Turkish Delight and Marshmallow
