Patisserie and Confectionary

The catering and hospitality industry is a energetic and exciting sector. A career in hospitality offers a dynamic working environment, an industry with continued job growth and boundless possibilities. You will gain the advanced patisserie skills and knowledge and other workplace essentials that will help you secure a job in the future.

This level will suit learners who have a level 2 in patisserie and wish to develop more advanced technical skills in patisserie and confectionery.

You will:
– Gain knowledge and advanced skills required to become a pastry chef. At level 3 you will undertake topics around gastronomy, advanced skills and techniques in producing pastry products and understanding how to use supervisory skills.
– Produce hot and cold desserts and puddings
– Produce paste based products
– Produce biscuits, cakes and sponge products
– Produce fermented dough products
– Petit fours
– Produce display and decorative pieces
