Cooking with Seafood Masterclass Level 2
In this one-day masterclass, you’ll develop skills in preparing and cooking a range of seafood. This will involve observing and taking part in practical sessions, where you will be hands on preparing and cooking fish throughout the day.
All equipment and fish ingredients will be provided but applicants will need to bring suitable chef whites/apron and non-slip shoes to take part in these sessions.
- You must have a keen interest in preparing and cooking different styles of fish and been employed or currently working in industry, with a desire to upskill in your practice and knowledge
Prep flat fish, prepare fillets, work out weight, waste and pricing
Identify how trimming and finishing fish alters costs
Prep and fillet whole white fish
How to prepare shell fish, depending on seasonal catches
Observe seasonal fish demo by master craftsman
